Balsamic Garden Medley

Ingredients
1 large bell pepper1 large onion1 cup diced tomatoes1 large cucumber sliced1/4 cup Extra virgin olive oil1/2 cup balsamic vinegarGarlic salt and ground black pepper to taste (not included in sodium content)
Directions
Chop/dice all vegetables and place in large tupperware container. Mix in vinegar and olive oil until veggies evenly coated. Add garlic salt and ground black pepper to taste.
Chill for 2-3 hours before serving to allow veggies to marinate
Re-uses well when stir fried with sliced potatoes.
