Slow Cooker Ham and Scalloped Potatoes

Ingredients
1 1/2 lbs 98% fat-free ham, cut into 8 pieces8-10 medium sized potatoes, thinly sliced2 onions, peeled and thinly sliced1/2 tsp salt1/4 tsp black pepper, or more according to taste1 cup fat-free shredded cheddar cheese10 3/4 oz can 98% fat-free cream of celery souppaprika
Directions
1. Layer half of ham, potatoes, and onions in slow cooker.
2. Sprinkle with half the salt and pepper, and then half the shredded cheese.
3. Repeat layers.
4. Spoon undiluted soup over ingredients.
5. Cook on low 8-10 hour or high 4 hours.

    I think I'll leave out the cheese and switch from cream of celery to 98% fat free Cheddar Cheese soup... that way it'll be perfect for me: Less calories, MORE CHEESE! :) - 12/15/08

    I like this, except for the canned soup. watching sodium here as well. Sub a mix of dry milk, sodium free boullion and cornstarch to save a lot of sodium. :) - 12/21/08

    I added some garlic and dijon and it really added a nice kick to what is going to be a great comfort food standby for these frigidly cold winter days. Those that complalin about bland taste need to figure out what spices are all about and vary to their liking instead of complaining! - 12/14/08

    I haven't made this yet but plan to. I like the cheddar cheese soup instead of reg. cheese. Sounds like a good idea for leftover baked ham instead of pea soup. I will cut the ham in chunks instead of slices tho. - 12/27/08

    I replaced the ham with chicken and some of teh potatoes with a couple of layers of frozen mixed vegetables. Turned out quite tasty, but not quite creamy enough. I'm thinking of adding 1/2 Cup of fat free sour cream to the soup. - 12/21/08

    Cut back on the cheese to 3/4 cup as I was using whole fat old cheddar. I used the mix (recipe here on SP) to make the 'celery' soup. Very good!! - 8/11/11

    kendranoel - if you read it says 10 3/4 oz can soup that is one 10 3/4 oz can or - (if you can find it) ten 3/4 oz cans of soup would be fine, but good luck finding them - - 11/30/10

    I tried this recipe because it is too hot to heat up kitchen with the oven. I was disappointed. It tasted like something out of a can. Will stick to the old way with a roux. Thanks anyway. - 6/29/09

    I can't understand why we would want to eat ham - ok, it is 98% fat free...but the dish would taste great without it. And, yes - the low sodium soup would be fine. I am making scalloped potatoes for my husband's work Xmas lunch and I think i'll try it first....PLUS they are having a ham already.. - 12/20/08

    I used cheddar cheese soup undiluted and turkey ham. It was easy and tasty. I'll serve it again. Might add some hot sauce to pep it up a little. - 12/17/08
