French Vinagrette Chicken

Ingredients
Approx 1/3 cup balsalmic vinegarApprox 1/3 cup olive oil2-3 tbs dijon mustard3 cloves garlic, diced2 boneless skinless chicken breasts, cut in halfpepper, a small palmful2 sprigs fresh thyme (optional)
Directions
In a ziploc bag or bowl, combine all ingredients except the chicken. Mix well and add chicken. Marinate for at least 30 minutes.

In a medium pan, empty contents of bag or bowl, including all of the marinade. Cover and cook over med heat for 20 minutes or until the chicken is cooked through, turning occasionally.

Makes 4 servings.

    My son and husband actually liked this recipe but I wasn't very fond of it. They gave it a 4 and I gave it a 2. I'm looking forward to trying some of your other recipes though. - 3/9/12
