Mom's Potato Filling

12 C mashed potatoes1 C diced celery2 C diced onion1 C butter (split)8 med slices of sourdough bread (cubed)3 to 5 TBSP dried parsley
Make mashed potatoes.
Saute onions and celery in 1/2 c of butter until onions are golden brown. Cube bread and place in large bowl. Add onions and celery and parsley to bread. Melt 1/4 C of butter in pan and drizzle over bread, celery, onions and parsley and mix well.
Add mashed potatoes and mix well. Place mixture in large baking dish. Slice remaining 1/4 C of butter into about 5 pieces and place on top of filling. Bake at 350 degrees for about 20 to 30 minutes or top is slightly browned.
