Byerlys Turkey Wild Rice Soup

Ingredients
6 T butter1 T minced onion1/2 c flour2 1/2 c chicken broth 2 c turkey1/2 c carrots3 T chopped, slivered almonds1 c dry sherry1 can evaporated skim milk
Directions
Makes 7 cups.

Melt butter; saute onion until tender. Blend in flour; gradually stir in broth. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil and stir 1 minute. Stir in wild rice, turkey, carrots, almonds; simmer about 5 minutes. Blend in evaporated milk and sherry; heat to serving temperature.
