Sprouted Lentil Soup

Ingredients
1/4 cup sprouted lentils1/4 cup chopped carrot1/2 cup fresh spinach leaves1/4 cup chopped celery1/4 cup chopped tomatoes2 tbsp chopped onion1-2 cups vegetable broth (to taste)pinch diced garlicsalt to taste1 tsp olive oil
Directions
Heat olive oil in small saucepan.
Saute onions, carrots, and celery for a few minutes, until soft. Add garlic and saute a minute more. Add in spinach and cover to wilt, then add in lentils, tomatoes, and vegetable broth. Stir, cover, and simmer until veggies are tender.

Season with salt and other seasonings to taste, serve!

Makes 2-3 cups.
