Smokey Gouda Cheese Soup

Ingredients
3lb. Cooked Chicken2lb. mushrooms (shitake or button)sliced1/2 stalk celery chopped1 whole onion chopped1qt. 1/2&1/2 cream1Tbsp. olive oil2lb. Smokey Gouda Cheese shredded1lb. butter2 cup flourpepper to tastel1/2 gallon chicken stock
Directions
Saute onion and celery in olive oil until veggies are soft. Add butter. Heat until melted,stir in flour and blend until smooth. Cook roux stirring constantly about five min.,but do not let it turn color.blend in chicken stock ,add mushrooms and cream stir in cheese cook gently stirring frequently until cheese is melted and consistency is thick and smooth. Be careful not to scorch. Keep heat medium low. Add chicken and pepper to taste. Makes 48 servings
