Ingredients
Yellow Sweet CornRed Kidney BeansLima BeansFresh Garlic CloveSour CreamFresh or Minced OnionMorning Star VeggieBurger CrumbleMilkShredded Cheese
Directions
In large saucepan pour 1/2 cup water and minced onions or freshly diced onions into water on high heat. Add veggie crumble (whole bag). Wait a minute or so stirring, then drain and add canned lima beans and red kidney beans. Drain about half of the liquid from the canned corn and add the rest of the contents into saucepan. Dice or chop up the fresh garlic clove and toss that in. Stir everything up and let it cook about 10 minutes. Add the milk and sour cream and shredded cheese near the end while reducing heat and continuing to stir (low heat). Serve while still hot. It cools down quickly. Makes a great meal or side dish, adjusting portion accordingly. This is all vegetarian. The Morning Star crumble is like veggie burger ground meat crumbled up like bacon bit sized salad toppings, only made with vegetarian ingredients such as veggies and soy. Delicious healthy meal. The sour cream, milk, and cheese is where most of the fat comes from in this dish so feel free to substitute, remove, or alter according to your needs. Serves about 5. Enjoy!
