Thai Basil Chicken and Brown Rice

1 1/2 lbs boneless skinless chicken breast, cubed1 medium onion, chopped3 cloves garlic, chopped2 cups red, yellow, and green bell pepper strips4 tbs soy sauce1 tbs thai basil1/4 tsp black pepper1 16 oz package frozen sugar snap peas1 cup uncooked brown rice
Cook the brown rice according to package directions.
Meanwhile saute the onions, garlic, and chicken in a large skillet.
Once the chicken is cooked and the onions are tender add the bell peppers and black pepper.
Cook for about 5 more minutes or until the peppers are tender.
Add the soy sauce, thai basil and sugar snap peas.
Cook just until the sugar snap peas are heated through.
To serve place 3/4 cup of brown rice in each serving vessel and top with 1/4 of the chicken mixture.
