Broccoli Casserole (healthier version) ala Diane

Ingredients
2 cup Instant brown rice2 lbs chopped frozen broccoli1 large chopped onion1 small 8 oz jar of jalapeno cheese whiz, low fat2 can (8 oz) water chestnuts, sliced1 can reduced fat mushroom soup2 cup non-fat chicken stock/broth1 cup chopped walnutsPam cooking spray
Directions
Mix broccoli, onion, chestnuts, walnuts, rice and 1 cup of the stock. Pour into 13x9 casserole pan coated lightly with Pam. Melt cheeze whiz and soup together, with 1 cup broth. Pour soup mixture over casserole, fork in - do not stir.

Bake at 350 for 45 min.
