Chickpea Cookies

Ingredients
1C.brown sugar3/4C.lactose free margarine2 egg whites2tsp. vanilla1 can crushed chick peas1/3C chocolate chips2C. Flour1/2C. rolled oats1tsp. baking soda1/4tsp salt
Directions
Beat sugar, margarine, add egg whites(I've used a flax seed mixture for egg substitute to make egg free as well) and vanilla. Beat in chickpeas, then add flour, oats, chocolate chips, baking soda and salt and mix well. Spoon by teaspoon and flatten on cookie sheet. Makes approx. 60cookies - I freeze half as they have a 3day storage on the counter.
