Toasted Coconut Banana Bars

Ingredients
1/2 cup wheat flour1/4 cup flour2 teaspoons baking powder1 teaspoon baking soda1/3 cup vegetable shortening3 medium bananas, mashed 1/4 cup egg substitue1/2 cup milk1/4 teaspoon fresh lemon juice1 1/2 cup flaked coconut, divided
Directions
Preheat oven to 350 degrees. Grease 13x9-inch baking pan.

Combine flour, baking powder and baking soda.

In a large bowl, beat the shortening and bananas until smooth. Beat in the egg, milk and lemon juice.

Gradually blend in the dry ingredients. Fold in 1 cup coconut. Spread mixture evenly in prepared pan. Sprinkle remaining coconut over the top.

Bake 15-20 minutes or until the top is lightly colored, and a toothpick inserted in center comes out clean. Cool in pan on a rack before cutting into bars.

    Easy to make. I did not use sweetened coconut which I wish I had. I missed a sweeter taste. I did have very ripe bananas therefore I was able to taste a strong banana flavor which was very good. I would make again. - 2/9/13
