Easy Taco Casserole

Ingredients
1 lb. extra lean ground beef1 pkg. low sodium taco seasoning1 - 16oz can fat free refried beans4 oz. (2 cups) crushed baked tortilla chips3/4 c. chopped onion3/4 c. water1 - 8oz. jar taco sauce1 c. shredded cheddar cheese - divided
Directions
Heat oven to 400.

In medium skillet over medium high heat, combine ground beef and onions; cook and stir untl beef is browned. Drain. Stir in taco seasoning and water; simmer 10 minutes. In medium bowl, combine refried beans and taco sauce. In ungreased 8 in. square baking dish, layer 1/2 of bean mixture, 1/2 of beef mixture, 1 3/4 c. chips and 3/4 c. of cheese. Top with remaining bean and beef mixture. Bake at 400 for 25 minutes. Remove from oven; top with remaining tortilla chips and cheese. Return to oven; bake an additional 3 to 5 minutes or until cheese is melted. Serve with lettuce and tomatoes.

    I made this last night and subbed broken taco shells for the tortilla chips so we could use them up. We didn't have any refried beans on hand so I skipped them and threw in 2 cups of frozen corn as I did the layering before baking. Awesome dinner!! Will definitely make it again. - 9/7/14
