Ingredients
Directions
1.33 lbs of smoked turkey (cut into 1/2 inch slices)OR if you can find it, chicken sausage (we have a specialty store here that carries smoked chicken sausage)1 box of Swanson (or equivalant) vegetable broth (4 cups)2 bunches of collards washed and chopped.Approximately 5 cups of water if you are using a crock pot, 3 cups if using a dutch oven.Salt and pepper to taste
This can be made on the stove top in an hour, however, I like to prep it into the crock pot and return to find dinner done. A seving equals 1.5 cups of collards and sausage mixed. If you like, you may add the cooking broth too.
Crock Pot Directions: Chop sausage and collards into your pot. Add water and veggie broth. If your pot needs a lot of water to work, add the 5 cups of water. (some of the newer ones do not need to be full) Set your crock to high if you are fixing it in 3 or less hours, low for 8 hour time spans.
On the stove, bring collards to boil then reduce heat to a fast simmer for 45 minutes. Add the sausage for the last 15 minutes to "warm up" This will leave a bit of "tooth" or "crunch" to the collards. I don't like them as mush.
Feel free to e-mail me for particulars. Enjoy.

Hey, this was darn good! I was really skeptical, because it doesn't have any seasonings other than salt and pepper. I admit, I added an onion, sauted that and the sliced turkey sausage until the onions were soft, then added the rest and cooked it on the stove for a long while. I will make again! - 5/17/12
