Meatloaf "Muffins" with BBQ Sauce

Ingredients
Meatloaf muffins:1.5 lb lean ground beef (preferred to extra lean)3/4 c oatmeal (can use dry bread crumbs as well)160 ml 1% milk (or canned milk)1 egg1/4 cup fiber one cereal crushed1 tsp chili powder1/2 tsp garlic powder1/4 tsp salt1/4 tsp black pepperBarbecue Sauce:1 cup light ketchup (I use blue menu)1/4 cup chopped onion or 1 tsp onion powder2 Tbsp brown sugarOptional: 1/2 tsp hot pepper sauce
Directions
1. Meat loaf muffins: In a large bowl, combine ground beef, oatmeal, bran, milk, egg, chili powder, garlic powder, salt, and pepper. Divide mixture evenly among muffin cups, pressing down lightly.

2. Barbecue Sauce: In another bowl, combine ketchup, onion, sugar and, if using, hot sauce. Spoon about 1 Tbsp sauce over each muffin.

3. Bake in preheated oven for 25 to 30 minutes or until meat is no longer pink in centre.

Makes 12 muffins (if using regular tin) or 6 muffins using Jumbo tin. Serving size is either 1 jumbo muffin or 2 regular sized.

    These were amazing!!! :) I added pepper flakes though to give it a little more heat :) ...I also added half a red pepper and half a green pepper to the meatloaf mixture :) - 4/4/12

    I love this recipe, but I'm not clear on the portion size. Is the jumbo the size of a regular cupcake you would buy at the store, or is jumbo bigger? We r trying to figure out the weight watchers points and we aren't sure on portion size. Thanks. - 2/4/11
