Moist, lowfat banana muffins

Ingredients
1.5 cups all-purpose flour1/2 tsp baking soda1/2 tsp salt1.5 tsp cinnamon1 tsp nutmeg1 cup sugar2 eggs, beaten1 cup mashed bananas (about 3 bananas)3/4 cup unsweetened applesauce1/4 tsp vanilla extract1/4 tsp lemon extract (optional)
Directions
1. Mix dry ingredients.
2. Add eggs, bananas, and applesauce. Mix well.
3. Mix in vanilla and lemon extract.
4. Line 12 muffin tins with paper cups (optional), and fill nearly to the top.
5. Bake at 325 degrees for 25-30 minutes, or until toothpick inserted at middle comes out clean.

Optional: Add 1/2 cup chopped pecans or walnuts.
