Creamy Carrot Soup

Ingredients
4 carrots, sliced (about 1/2 a pound)1 medium onion, sliced1 rib celery, sliced (a few leaves are good)1 large potato, peeled and diced2-3 sprigs of parsley1 tsp. salt and pepper to taste1 can (10 1/2 oz. size) chicken broth1 cup water3/4 cup cream (or half and half)
Directions
1) Combine all ingredients, except cream into a soup pot
2) Simmer until vegetables are done
3) Blend in blender and add cream
4) Re-heat to desired temperature

The recipe can easily be doubled to serve 8, delicious the next day.
