Kel's Chicken Pie

Ingredients
250gms pre-cooked Chicken breast 6 rashers of trimmed bacon1 cup apricot halves (sometimes I will use drained apricots from a can)1 cup fresh mushrooms, sliced1 tsp of crushed garlic1 cup chicken stock, home-prepared1 cup non-fat milk100gms grated Edam cheese1 cup breadcrumbs (I prefer crumbling bread into crumbs myself)
Directions
Using the shredded chicken, I place into a baking dish. I chop up cookd bacon & crushed garlic into pieces, adding that too.

I then stir until combined... then add the apricots and mushrooms. Sometimes I'll use a few dried herbs - maybe a little thyme, as well as ground black pepper. I then add the chicken stock and milk (I often use Lite Evaporated milk as a yummy alternative).

Stirring it all together to combine, I then top with the breadcrumbs and the cheese topping (already mixed together).

I bake at 180C/350F for around 30 minutes or so, or until golden brown on top.

Serve... yum!
