Applesauce, Pumpkin, Craisin Muffins

2c quick cooking oats2c 1% milk1 1/2c whole wheat flour10 tbs Splenda Brown Sugar Blend3/4c unsweetened applesauce3/4c canned pumpkin2 eggs2 tsp baking powder1 tsp baking soda1 tsp salt2 tsp cinnamon2 1/2 tsp pumpkin pie spice2/3c dried cranberries
soak oats in milk until mostly absorbed (30 minutes or so)
pre heat oven to 400
spray muffin pans with cooking spray
combine oat mixture with applesauce, pumpkin and eggs until combined
in a separate bowl measure and mix flour, sugar, baking powder, baking soda, salt and spices
and to wet ingredients and mix until just combined
stir in cranberries
do not over mix
spoon in to pans and bake for 20-25 minutes
makes 24 muffins
