Cajun Maque-Chou

Ingredients
4 cups of fresh corn kernels from about 6 large corn cobs2 Tbs. unsalted butter1 large onion, chopped1 green bell pepper, chopped1 red bell pepper, chopped1 tsp. salt1 tsp. black pepper1/4 tsp. red pepper1 cup light whipping cream
Directions
Heat butter in a heavy skillet over medium heat being careful not to scorch it. Add remaining ingredients except cream, and stir to blend. Saute until corn kernels have started to brown lightly, making sure the kernels don't stick to the bottom of the pan, about 15 minutes. Add the cream and stir to blend. Cook just until cream has reduced to form a gravy, about 10 minutes. Serve hot.
