Vegetable Souvlaki

Mushrooms, fresh, 24 mediumTomatoes, 24 wedges (1/4 of medium tomato)Zucchini, 1 cup, large slicesOnions, 3 medium cut into wedges8 skewersMarinadeExtra Virgin Olive Oil, 4 tbspLemon Juice, 2 lemon yieldsOregano, dry, 2 tspThyme, fresh, 1 tspGarlic, 4 cloves minced
Combine marinade with whisk.
Marinade vegetables for at least 2 hours, then thread onto skewers and grill at 400 F for 5-8 minutes or until tomato begins to char. Can also be done of the BBQ.
Note:
If you are using wooden skewers, be sure to soak them in water for at least an hour before use.
