Oven Roasted Garlicky Vegetables

Ingredients
.25 cup olive oil.25 cup soy sauce2 medium potatoes400g peeled pumpkin 200g kumara (sweet potato)1 large carrot1 head of Garlic .
Directions
Turn oven on to Preheat to 375 degrees F

Add Olive oil and soy sauce to a large bowl

Peel and chop the vegetables into approx 2 inch square pieces and add to bowl

Separate the garlic cloves, peel and add whole

Toss the veges in the olive oil & soy sauce mix and pour into a large roasting pan

Put into hot oven for 1/2 hour then turn veges and put back for the other 1/2 hour
