Pasta with Chicken and Tomatoe

Ingredients
Sunflower Oil, 2 tbsp 3 med onions4 Chicken Thighs (bone and skin removed)8 large tomatoes5 cups chicken stock, home-prepared (or use a stock cube)4 cups cooked whole wheat spaghettiSalt, 1 tsp*Flour, white, 5 grams
Directions
Serves 4 adults. Plenty for a light dinner.

Put oil in a pan, add finely chopped onions and fry until golden.
Add the skinless chicken thighs. Stirr well cook for 15 mins.

In a second saucepan start cooking your pasta according to instructions (usually 15-20 mins).

Add the chopped tomatoes and salt to your onion and chicken. When the tomatoes start to break up sprinkle the flour over the tomatoes to help thicken the sauce. Aadd the stock and bring to the boil then simmer gently until all the chicken is cooked (from start to finish approx 30 mins).
