Glazed Carrots & Parsnips

Ingredients
2 med carrots, sliced1 1/2 - 2 parsnips, sliced1 tbsp butter2 tsp packed brown sugar
Directions
Slice carrots & parsnips. Place in small casserole dish. Put butter & brown sugar on top. Cover & microwave 5 minutes. Stir. Microwave another 5 minutes. Test carrots to see if they're soft. If necessary, stir & microwave another 5 min.

    I needed to microwave a bit longer than the instructions said, but overall they were pretty tasty adn my boyfriend said to make them again. I think next time I may add a littley honey to the mixture. - 3/18/13

    Since the original served 10, I tried to scale down the ingredients. As a result, my glaze wasn't quite as syrup-like as it might have been. The flavor was still quite good, though. - 1/24/12
