Faux Fried Rice

Ingredients
.5 cup frozen peas2 egg whites (optional)1 tsp sesame seeds (white or black).25 cup veg or chick stock1/6 of a block extra firm tofu2 tbsp chopped green onions.75 cup long grain brown ricesalt and pepper to taste
Directions
Combine sesame seeds and uncooked rice in a sauce pan. Dry toast rice and seeds until lightly browned. This gives rice a nutty flavor. Then cook rice as directed and chill in refrig.

In a non-stick pan on low heat scramble egg whites. Add frozen peas and cook until thawed. Turn heat on high and add tofu. Cook until browned on all edges. Add cooked rice. Use chicken stock spiratically to keep ingredients from sticking to the pan.
