Grasshopper Pie

Ingredients
Nonstick cooking spray2 Cups Low-Fat Graham Cracker Crumbs4 Tablespoons Unsweetened Cocoa Powder1/4 Cup Trans-Fat-Free Margarine, melted8 Ounces Fat-Free Cream Cheese, Softened1/4 Cup Sucralose-Sugar Blend1 Cup Low-Fat (1%) Milk1 Teaspoon Mint Extract4 to 6 Drops Green Food Coloring (Optional)1 1/2 Teaspoons Vanilla1 Container (8 ounces) Frozen Fat-Free Nondairy Whipped Topping, Thawed
Directions
Spray 9-inch pie plate with cooking spray. Combine cracker crumbs, cocoa and margarine in medium bowl. Press onto bottom and up side of prepared pie plate. Refrigerate.

Beat cream cheese and sugar blend in large bowl with electric mixer untill fluffy. Gradually beat in milk until smooth. Stir in mint, food coloring if using and vanilla. Fold in whipped topping. Refrigerate 20 minutes or until chilled, but not set. Pour into chilled crust. Freeze 4 hours or until set

Serve slices as needed. Pack remaining frozen slices in 1-quart freezer resealable plastic food storage bags and return to freezer. Makes 8 slices.
