Nica's Cajun rice & beans

Ingredients
.5 cup brown rice1/2 cups chicken broth 1 tbsp Olive Oil5 small Celery strips, finely chopped8 medium Baby Carrots3 cloves Garlic2 cups (1 can) Stewed tomatoes1.5 cups (1 can rinsed & drained Pinto Beans2 ounces almonds, choppedCuminCajun Seasoning - such as Tony Chachere's
Directions
Drain canned tomatoes. Yields 1 cup of liquid, use the liquid and chicken broth to cook the rice. Add Cumin and Cajun Seasoning to taste. For a less spicey flavor, replace the Cajun seasoning with a preferred spice or omit entirely.

Chop garlic, celery, onion and carrots finely. Saute in Olive oil. Cook for about 6 minutes or until just done, but not too soft. Chop or sliver the almonds. (these are added simply for crunch and MUFA's, can be omitted to lower the overal caloric intake)

Once rice has finished cooking, combine everything (sauteed veggies, drained tomatoes and rinsed/drained beans) and enjoy.

    Great potluck dish. I changed the pinto beans to red beans and added tomatoes with diced chilies for more zing. Everybody liked them. - 12/25/10

    Very tasty. I didn't see onion on the ingredient list, so I used 1/2 medium - 11/8/08
