1 large skinless, boneless, chicken breast2 Tbsp. Bertolli Extra Virgin Olive Oil2 cans fat free, 40% less sodium chicken broth4 cans water1/2 cup chopped celery1/2 cup chopped carrots1/4 tsp garlic powder1/4 tsp. onion powder1/4 tsp. ground black pepper1/2 Tbsp. dried parsley1 cup Allegra Linguine No. 17, broken in small pieces
Saute chicken breast in olive oil until browned. Add all ingredients, except linguine, to water and broth mixture. Simmer about 30 mins. Add linguine and cook about 9 minutes.
If you don't have to watch the sodium intake, a pinch of salt (or enough to season to taste) can be added.
Makes approx. 10 - 8 oz. cups of soup.
