Sausage Egg Casserole (Low Carb)

12 ounces breakfast sausage (reduced sodium or low fat preferred), browned12 large eggs1/4 cup skim milk 2 c shredded low-fat Cheddar cheese 1/4 t pepper
Preheat oven to 375*F.

Mix all ingredients together and pour into a greased casserole dish.


Spray a 12 cup muffin pan and fill each muffin cup evenly.

Bake for 30 minutes. Cool for 5 minutes and serve. Makes 12 servings.
