Loaded Tilapia

1 Tilapia Filet about 4 oz1 ripe tomato, chopped1 raw onion, chopped3 cloves of garlic, chopped fine1 lemonParkay Margarine Spray, or any other light oil spray4 tbsp fresh Cilantro 4 tbsp fresh Parsley Salt Pepper
Marinate the Tilapia in the salt, pepper and 1/2 of the lemon juice for 20 minutes or overnight.
Preheat oven to 400 degrees.
Mix tomato, onion, cilantro, garlic and parsley in a large mixing bowl, add salt and pepper to taste.
Arrange Tilapia fillet on a baking sheet sprayed with Margarine Spray (or equivalent). Put the vegetables on top of the fish and cook in the oven for 15 minutes, or until fish is done.
spritz the remaining lemon juice on top of the fish just before serving.
The onion and tomato help eliminate the "fishy" smell while its cooking so your house won't smell like fish at all, which used to be a huge barrier to my cooking it!
