Meggers Spinach Dip

Nonstick cooking spray1/2 cup finely chopped onion2 10-ounce packages frozen, chopped spinach, thawed and squeezed dry1 8-ounce package fat-free cream cheese1 8-ounce carton light sour cream3/4 cup Parmesan cheese1 14-ounce can artichoke heartsCrushed red pepper flakes, to tasteBlack pepper, to taste1/4 teaspoon salt (optional)1 cup reduced-fat jack cheese, shredded
