Granola with craisins, coconut & pecans

Ingredients
6 cups (GF certified) oats1 cup flaked coconut1 cup pecans2 cups craisins1/3 cup honey1/3 cup vegetable oil
Directions

Preheat oven to 225. Grease a large roaster with vegetable oil spray. Combine in the roaster the oats, coconut, and nuts.
In a saucepan combine the honey and oil and heat, stirring constantly, until it comes to a boil. Remove from heat and drizzle over the oat mixture. Stir well.
Bake at 225 for 2 hours, stirring every 30 minutes. Add the craisins and turn off the oven. Put the pan back in the oven and let the granola cool and dry out. (Can be left in overnight). Store in airtight containers.
Makes 10 cups (20 1/2 cup servings)
