2 8 ounce low fat cream cheese1 whole egg1/4 eggbeaters1 tsp vanilla extract1/4 tsp almond extract1/2 c SplendaAlmond meal 1/4 cup2 tsp splendaoption topping: fresh cup Berries or tsp of Sugar free Jam
Preheat oven to 350 degrees. Either use a silicone muffin liners or line muffin pan w paper baking cups
Soften the cheese to room temp. Then beat in the eggs, eggbeaters and splenda, until smooth. Then add the vanilla and almond extract. Place approx 1 tsp of almond mix in bottom of muffin cup and press down w you fingers to firm up Then Fill to 2/3 level in muffin pan.
Bake for 20-25 minutes Cool on rack.
The center will fall which is just perfect to add, if you like fresh fruit, sugar free jam
Keep refrigerated.
