Ingredients
4 sweet potatoes (5" long), peeled & cubed1/2 cup orange juice1 tsp orange zest1 tbs brown sugar (.0625 cup)1/2 tsp cinnamon, ground1/2 tsp ginger, ground
Directions
Bring a large pot of water to a boil. Add sweet potatoes and cook for 20-25 mins until tender. Drain sweet potatoes and add orange juice, orange zest, brown sugar, cinnamon, and ginger. Mash until smooth.
