Parsnip, Leek, & Ginger Soup

Ingredients
2 Tbsp. Olive Oil8 oz. Leeks, Sliced2 Tbsp. Fresh Ginger, minced1 1/2 lbs.Parsnips; peeled and roughly chopped1 1/4 White Wine (Sauvignon Blanc) or Vegetable Stock5 Cups Vegetable Stock (more to thin if necessary)
Directions
Heat oil in large stock pot. Add leeks and ginger; cook until leeks are soft. Add parsnips and cook about 8 mins. more. Add wine (if using) and stock and bring to a boil. Simmer until parsnips are tender (25-30 mins). Puree in blender or food processor until smooth- add more vegetable stock if necessary. Add salt & pepper to taste. Makes about 6 servings.
