2 cups all-purpose flour3/4 cup sugar2 tsp baking powder1/2 tsp baking sodapinch of salt1/2 tsp cinnamon1/8 tsp nutmeg1/4 cup canola oil2/3 cup nonfat (skim) milk1 egg lightly beaten1 tsp vanilla2 small ripe bananas, mashed
Preheat oven to 350 degrees. Coat a 12 cup muffin pan with cooking spray.
In a large bowl, stir flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg together. Make a well in the center.
In a medium bowl, combine oil, milk, egg and vanilla. Add to dry ingredents. Mix. Add mashed bananas, stir until just combined.
Fill cups 3/4 full. Bake for 18-22min.
Serving size 1 muffin. Makes 12
