Curry-Cauliflower-Pork Loin Bake for 2

Ingredients
2 [3 oz] Pork Loin Chops1/2 Head of Cauliflower, cut in thin slices1 tsp dried minced Garlic1 tsp Curry Powder1 cup chopped onionPAM spray8 oz of Chicken broth
Directions
Preheat oven to 350 degrees.
Warm dutch oven on stove top. Spray with PAM.
Quickly brown pork loin chops on each side.
Slice 1/2 head of cauliflower into thin slices. Chop the onion. Remove the chops. Add the vegetables stir well. add the chops on top of the vegetables. Sprinkle seasoning over all. Add Chicken broth.
Place in 350 degree oven for 30 minutes, or until vegetables are tender.

    Good, fast, tasty. Rather bland to look at, though. Think next time I'll include some sliced tomatoes, spinach, green and/or red pepper, etc. Something to make it look as good as it tastes. - 11/5/11

    I added thinly sliced carrot, mushroom and one sliced jalapeņo. My Hubby really liked this dish. He wants me to make it with all veggies next time and forget the pork. I may try it with chicken tenders
    and tomatoes next time. Its a keeper. - 7/8/15
