1 tsp mustard seeds1 tbsp canola or other vegetable oil7-8 medium well-ripened tomatoes, diced2 small onions, diced1 sprig curry leaveschili powder to taste1/2 tsp turmeric Salt to taste2-3 tbsp chopped coriander leaves for garnish
Heat oil
fry mustard seeds until they pop
fry onion until golden
add tomatoes, chilli and turmeric, cook on medium low heat until tomatoes soften and let out most of their juice. The tomatoes should break down completely. Add coriander and turn off heat
