Low-Sugar Molasses Cookies

Ingredients

1/2 C canola oil1/4 C molasses1/2 C Splenda1 egg2 tsp baking soda1 tsp cinnamon1/2 tsp ginger1/8 tsp cloves1 C all purpose flour1 C whole wheat flour1/4 C sugar
In bowl, mix oil, molasses, Splenda and egg.
In another small bowl, combine flours, baking soda and spices. Add flour mixture to molasses mixture.
Mix well.
Cover and refrigerate dough for at least 2 hours.
Shape dough into one-inch balls and roll in sugar.
Place on cookie sheet about 2 inches apart.
Bake at 375 for 6-8 min (my oven runs hot).
Remove from baking sheet immediately.
Makes 30-35 cookies.

Thanks, I wish I could take credit, but I simply couldn't find it anywhere on the site, so I reentered it, with some adjustments for my oven (which tends to run hot) Saw the original when it came thru as the 12 Days of Cookies Recipe of the Day.
