Black Walnut Spice Cookies

Ingredients
1 cup chopped black walnuts2 egg whites2 dash salt1/2 cup Splenda2 tsp cinnamon1/4 tsp nutmeg1/4 tsp cloves
Directions
Recipe makes 18 cookies

Beat egg whites with salt until firm peaks form. Mix sugar with spices and slowly add to beating whites. Fold in walnuts and drop by heaping tsp onto a cookie sheet lined with a silpat or parchment paper. Bake at 250 degrees for 35-40 minutes until cookies look "dry". Cool completely.

    Wow, practically impossible to eat just one! I made this with 1/2 Splenda and 1/2 sugar (sometimes all Splenda can have a slight aftertaste) and I used about 1/2 the black walnuts called for since their flavor is so powerful, and I plan to make this again soon! An excellent, not-too-sweet treat! - 4/4/10
