Indian style tuna pasta

Pasta (aprox 850g cooked) 3 cans of tuna in spring water1 cup of sweetcorn 1 large onion2 tbsp olive oilchopped coriander (preferably fresh). 1/2 tsp tumeric1/2-1 tsp chili powder (to taste)1 tsp salt
Makes aprox 6 1.5 cup servings
cook your pasta in plain water - until al dante.
meanwhile:
1- chop the onion into small pieces. Add to a pan on a high temperature with the olive oil and salt.
2- once sizzling, turn down the heat to a medium heat, stir and cover. cook until the onions turn translucent and slightly brown in colour. Careful not to let it burn.
3- add the spices and stir. cook for a further 2-5 minutes until the oil starts to separate from the onion.
4 - add the tuna, sweetcorn and coriander. Mix well until the spices have combined completely with the tuna.
5 - Add to the drained pasta. Mix well. Serve.
we normally eat this with a salad and a little bit of ketchup. A nice simple but wholesome lunch.
