Introduction

I adapted a "fish curry" recipe I found on SparkPeople to my own special diabetic dietary needs. This is delicious beyond belief.
Other vegetables that cook up quickly can be used in addition to the turnip or other greens - just make sure you re-calculate the recipe numbers. Also bear in mind that the more veggies you add, the more servings you will get out of the recipe so make your own adjustments accordingly.

Serve with Brown Rice and a Salad (not figured in recipe).

Ingredients

    2 Tbs. Olive Oil
    4 C. Fresh Turnip Greens, Chopped
    1 tsp. Ground Ginger
    1 Tbs. Yellow Curry Powder
    1 Tbs. Chili Powder
    1 - 10 oz. can ROTEL Original Diced Tomatoes with Chilies (Spicy) but you can also use the mild version.
    2 fillets fish of your choice (I used Red Snapper) cut into small pieces (approx. 1 inch)
    Dash Ground Red Pepper (Cayenne) to taste - optional

Directions

Heat Oil in a skillet and stir fry whatever vegetables you are using for about 30 - 40 seconds. If using the turnip greens or other leafy greens, reserve 2 cups for later.

Add spices and mix thoroughly in skillet with greens.

With heat on Medium High, add fish and stir fry until well mixed.

Add 10 oz. can of ROTEL Diced Tomatoes and Chilis and mix well.

Add remaining turnip greens and cover with lid.

Turn heat to Low and simmer for about 7 minutes or until fish is tender and heated through.

Mix well before serving.
