Ingredients

    Curried Shrimp
    2lbs of uncooked shrimp (remove shell and tails)
    3 gloves of garlic
    1 sml. Onion
    2 tbsp. of curry powder
    1 tbsp. of Coconut Milk
    2 tbsp. Of Veg. Oil

    Basmati Rice
    1 cup of rice
    ¼ tsp of salt or less.
    2 cups of water.

Directions

Seasoned shrimp with salt/black- pepper and any other fish seasoning. Saluted Chopped garlic & Onion in the oil. Mix curry powder with water into a paste and add to the saluted garlic & onion cook for 2-3 mins. then add shrimp and about ¾ of a cup of water and leave for 10 mins. do not over cook it could get rubbery add coconut milk about the 7th min.

Bring water to boil rinse rice about 4 or more times then add to boiling water cook at medium do not cover pot. Cook for about 15 mins and lower stove and cover pot for about 3-5 mins.

    This was easy to make and really yummy! My picky fiance said it's a "keeper" I added peas to make it a complete meal. I only cooked the shrimp a total of 7 minutes and it was delicious! - 2/12/09
