Hearty Blueberry Mini Muffins

Ingredients
1 cup unsweetened frozen blueberries1 1/4 cups whole wheat flour3 tsp baking powder1/3 cup sugar1 egg1/4 cup canola oil3/4 cup skim milk1 tsp sugar
Directions
Preheat oven to 400.

In a bowl, combine egg, oil and milk. Add baking powder and 1/3 cup sugar, mix well. Add flour, mix just until moistened. Fold in frozen blueberries.

Spray a mini muffin pan with vegetable spray. Fill each muffin cup just to the top. You should be able to divide batter among 24 mini muffins. Sprinkle tops with 1 tsp sugar. Bake for 10-15 minutes until golden brown.
