Baked & mashed sweet potatoes, 6 cups (about 6 pounds of fresh sweet potatoes to start with)Fresh-squeezed orange juice, 1 cup (about four oranges' worth)Butter, unsalted, melted, 1/2 stick (1/4 cup)Fresh lemon juice, 1/4 cupDark rum, 1/2 cupGrated orange zest, 1-2 tbspGrated lemon zest, 1-2 tbspGround nutmeg, 1/2 tspGround cloves, 1/2 tspGround cinnamon, 1/2 tspGround ginger, 1/2 tspSalt, 1/2 tsp or to tasteWhite pepper, 1 1/2 tsp or to taste (can substitute black pepper for less bite)The original version used 1/2 cup butter, but I don't notice a difference halving it.
Prep time includes potato-baking time, by far the biggest part of it.
Bake sweet potatoes at 425 degrees for 60-80 minutes, until very soft. Cut off one end of each potato and pierce the skin to prevent explosions.
Preheat oven to 350. Cool potatoes and mash.
In large bowl with mixer, blend all ingredients together.
Pour into a 4qt casserole and bake for 45 minutes, or until tipped with brown.
Serves 12-16.
