Applesauce Oatmeal Muffins with raisins and walnuts

1 cup old fashion rolled oats1 cup Light Silk SoyMilk1/4 tsp vanilla1/4 cup Splenda brown sugar blend3/4 cup unsweetened applesauce2 egg whites 1/3 c Bob's Red Mill Whole Grain Soy Flour, 35% Protein2/3 cup whole wheat flour1 tsp. baking powder1/2 tsp. baking soda1/2 Tbsp. cinnamon1/2 tsp nutmeg1/8 tsp cloves1/8 tsp allspice1/2 c raisins 3/4 c chopped walnuts
Soak the oats and in soymilk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg whites, and mix until combined.
In a separate bowl measure and whisk the dry ingredients together. Stir in nuts and raisins.
Add dry ingredients to wet and mix until just combined.
Do not over mix the batter or the muffins will be tough. Spoon muffin mixture into muffin pan.
Bake for 20 minutes or until done.
