orange pecan scones

Ingredients
2 eggs1/4 cup skim or buttermilk2 tsp vanilla extract1/4 cup orange juice concentrate(frozen of, at room temp)1 cup white whole wheat flour1 tsp baking powder2tsp baking soda1/2 tsp salt1/4 cup chopped pecans(roasted)2 tablespoons splenda (6 small packets)
Directions
Place nuts on cookie sheet, brown in 4oo degree oven for about 5 min. Set aside. Cream the butter, add beaten eggs, milk, extract , add orange zest, and frozen concentrated orange juice. Set aside.
Mix dry ingredients and slowly add the wet ingredient mixture til it forms a sticky dough.
Shape in disk, with floured hands and place on greased cookie sheet.
cut disk in 8 pie sized pieces(I use a floured pizza cutter) Do not separate pieces.
Bake in 400 degree over for about 30-40 min til golden brown and comes out clean.

    There are ingredients missing from the list, but included in the directions. It would be helpful to know how much butter and orange zest to use. - 1/22/09
