Turkey Barley Spelt Noodle Soup

10 c. chicken stock5oz. turkey breast, pre-cooked1 medium onions, finely chopped2 large carrots, chopped into 1" pieces4 sliced organic bacon1/2c. pearl barley1c. spelt noodles
Makes about 12 2c. Bowls.
Start with a good soup pot - I like my 6Qt. Le Creuset.
Saute chopped up bacon strips with finely chopped onions. Add carrots, celery and pre-cooked turkey chunks. Stir well. Add salt and pepper to taste. Saute until well cooked, about 20 minutes then add stock (yes, homemade). Add bay leaves, oregano, salt and pepper and simmer for an hour. Add barley and spelt noodles and 2c. clean water and simmer another 45 minutes until noodles and barley are cooked. Add two more cups of stock, salt if needed and bring to simmer. Serve w/sprouted bread and raw butter.
