1 stick butter1 medium cabbage (chopped)1 cup carrots (chopped)1 medium onion (chopped)8 cups low sodium chicken broth3 potatoes (peeled and chopped)24 oz Velveeta cheese (cubed)
Makes 8 1-cup servings
Melt butter and saute cabbage, carrots, and onion.
Add chicken broth and potatoes.
Cook over low heat until potatoes are softened. Add Velveeta cheese cubes and stir until cheese is melted. Do not boil after adding cheese.
Optional: For a spicier version, substitute half of the Velveeta with Velveeta Pepper-Jack or other spicier version of the product.
