Traditional Swiss Fondue

Ingredients

1 1/2 lb grated Gruyere and/or Ementhaller cheese1 1/4 cup dry white wine2 tsp cornstarch1 1/2 oz kirsch 1 clove garlic peeled, mashed and chopped finefreshly ground white pepperfreshly ground nutmeg
In non stick sauce pan heat wine and cheese until melted.
Whisk together kirsch and cornstarch; add with garlic to fondue pot.
Pour melted cheese/wine mixture into fondue pot with other ingredients; heat through but do not boil.
Add ground pepper to taste and sprinkle with ground nutmeg as garnish.
Dipper options (add calorie counts accordingly):
cubes of crusty bread
blanched vegetables (cauliflower, onions, carrots, trimmed radishes, broccoli)
boiled potatoes
fresh mushrooms
